Cancelling does not cut you off immediately. You keep access until the end of the period you already paid for, so if you have decided not to renew you can cancel straight away without losing anything.
Signing out or deleting the app is not cancelling. You have to go through the official cancellation flow.
A successful cancellation sends you a confirmation email. No email means it did not go through.
